  • 3 cup all-purpose flour
  • 1 cup flaked coconut
  • 1 can (8 ounce) crushed pineapple, drained
  • 1 cup walnuts, chopped
  • 2 cup very ripe bananas, mashed
  • 1 tsp baking soda
  • 3⁄4 tsp salt
  • 2 cup white sugar
  • 1 tsp floor cinnamon
  • 3 egg, crushed
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  1. Preheat the oven to 350 levels F (175 levels C).
  2. Grease two 9 x 5 inch loaf pans.
  3. In a big mixing bowl, mix the cinnamon, sugar, baking soda, salt and flour.
  4. Add the coconut, vanilla extract, pineapple, banana, oil, eggs and walnuts, and stir till simply blended.
  5. Divide the batter evenly into the ready pans.
  6. Bake for about 60 minutes (or till a toothpick inserted into the middle of a loaf comes out clear).
  7. Let cool within the pan for about 10 minutes, then take away to a wire rack to chill fully.
